Bombay Cheese & Corn Sandwich

INGREDIENTS

  • 4 White bread slices
  • 1 cup coriander leaves
  • 1 cup mint leaves
  • 2 small green chilies
  • 1/4 cup grated coconut
  • 1 tsp ginger
  • 1 tsp sugar
  • salt to taste
  • 2 tbsp lemon juice
  • 6 Cheese Love Sandwich cheese slices
  • Handful of canned sweetcorn
  • Salted butter

INSTRUCTIONS

Puree all ingredients except for the bread, cheese, corn and butter, until smooth.

Spread chutney on both sides of the bread, put sandwich cheese in the middle, sprinkle in the corn.

Spread butter on the outer sides of the bread and toast until golden on both sides.
