STUFFED PEPPERS WITH BEANS AND CHEESE
INGREDIENTS
- 50 grams CheeseLove Sandwich Cheese (Gouda)
- 50 grams CheeseLove Pizza Cheese (Mozzarella)
- 2 Cans Baked Beans (pre-boiled beans)
- 1 cup Brown or White Rice
- 2 Large Red Peppers
- 4 Garlic Cloves (chopped)
- 1 Onion
- 3 Tablespoons Curry powder
- Black pepper
- Salt
- Vegetable or Olive Oil
INSTRUCTIONS
Preheat oven to 180oC. Cook rice in a sufuria/cooking pot. Grate the CheeseLovePizza and Sandwich Cheese and set aside. Wash and cut the peppers in half. Remove all the seedsand insides from the pepper and place on greased baking tray. Sprinkle a dash of oil on the insides of the peppers and put them in the oven to grill for 15 minutes.After 6-7 minutes, turn the peppers so they cook evenly. Once done, remove and set aside.
In a pot, heat oil. Putchopped onion in pot. Add chopped garlic. Shortly after, add the curry powder and let it cook. Then, add two cans of the baked beans or pre-boiled beans and allow to cook for a few minutes (if using preboiled beans, add a bit of water and tomato paste to thicken the sauce. This isn’t necessary for baked beans). Then, mix in the cooked rice and set aside.Fill the peppers with the rice mixture and top them off with the grated CheeseLovePizza and Sandwich Cheese.Return the peppers to the greased baking tray and grill until cheese has melted, approx 5 minutes.Enjoy!
